Distillery in Ancram New York Expands and Announces New Triple Cask Rye Whiskey

Father’s Day Blend:
Debuting Father’s Day weekend at Hillrock’s Open House on Saturday, June 15th, Hillrock Estate Distillery will introduce their Open House Series Limited Edition Seasonal Release, which this Spring 2019 is the Triple Cask Rye Whiskey, finished at 102 proof.

This exclusive release is specially selected, barrel proof and made entirely from estate grown grain. The single barrel Rye Whiskey has been small batch distilled and aged on premises – first aged in char #3, then char #4 American white oak barrels. This unique whiskey is finished in a Tawny Port wine cask for 70 days. The triple cask finish creates a truly unique, Field-To-Glass American Rye Whiskey.

While this release is only available in limited quantities (under 250 bottles), whiskey fans will have the opportunity to fall in love with Hillrock’s wider lineup of cask finished spirits – which offer comparably complex and unique flavor profiles – in Sauternes, Port and Sherry cask finishes but at a more standard proof strength.

Open House Series Limited Edition Triple Cask Rye Whiskey Tasting Notes:
A rich nose of sweet Madagascar vanilla bean, crème brulee’, brown butter, and sweet dried plum. It is round on the palate with the estate’s signature notes of cinnamon and clove, flavors of blackberry, dates and velvety brown sugar, with sweetness of dark mission figs and cordial cherries, and lingering flavors of butter cake and dark baker’s chocolate.

About the New Still
After a long waitlist, Hillrock just completed a huge new custom made Vendome Copper Still installation. This expansion allows Hillrock to triple production to approximately 20,000 cases per year. The new Copper Pot Still, Lauter Tun and Fermention Tanks were custom made in the USA by Vendome Copper and Brass and were among the last systems designed by Master Distiller Dave Pickerell prior to his passing late last year. Looking to the future, this expansion will allow us to increase distribution over the coming years both domestically and overseas while maintaining our commitment to hand-crafting the highest quality whiskies.
