Introducing Hope Springs Distillery: One of Atlanta’s Newest Small Batch Spirit Purveyors

Gwinnett County’s first distillery since prohibition produces Top Hat Vodka and Jetty Absinthe with more to come

 

ATLANTA (Tuesday, June 19) – Located just east of Atlanta in the heart of Lilburn, Hope Springs Distillery launched  its first products in 2017 and produces premium, small batch spirits made for the discerning drinker. The distillery currently produces Top Hat Vodka and Jetty Absinthe, with plans for several types of gin to be produced this summer.

“We’re thrilled to open our doors to the public and share our top-quality products with our community,” says Betsey Dahlberg, co-owner of Hope Springs. “We take great strides to create thoughtfully made, locally-sourced spirits with all-natural products for our neighbors and friends.”

Gwinnett County’s first distillery since prohibition, Hope Springs was founded by local residents Paul Allen and Betsey Dahlberg in 2014, at a time when most people would be contemplating retirement. Fortuitously, in 2016, just as production was about to ramp up, the couple met Jaz Jarzewiak, a local spirit connoisseur who was looking for facilities to produce absinthe and other specialty products. Jarzewiak soon after teamed up with Allen and Dahlberg and his superb distilling skills led to his title of Master Distiller.

Hope Springs, which is named after Dahlberg’s family farm in nearby Stone Mountain, hand-distills its vodka from grain-to-glass and unique absinthe from spirit to glass. The community focused team released their first batch of Top Hat Vodka in July 2017, featuring a prominent photo of Lilburn’s namesake, Lilburn Trigg Myers on every hand applied label. The vodka’s smooth taste and crisp, clean finish pairs perfectly with mixers for craft cocktails or as a standalone beverage. The distillery’s second signature spirit is Jetty Absinthe, distilled and colored with a handpicked selection of herbs. Recently featured in Atlanta Magazine, Jetty is the only absinthe made and bottled for sale in Georgia, and is meticulously hand distilled with green anise, sweet fennel, wormwood and thyme added to wheat alcohol. With flavors and scents inspired by the outdoors, Jetty features a fresh, rich taste with infusions of peppermint, lemon balm, hyssop and black peppercorn to add a natural green-olive color. Jetty can be enjoyed traditionally with cold water or to make delicious cocktails.

Both Top Hat Vodka and Jetty are available for sale in retail liquor stores, restaurants across Georgia including King + Duke, Lean Draft House, Kimball House, H&F Bottle Shop and select Total Wine stores, and Hope Springs’ tasting room in Lilburn. The distillery’s 4,000-square-foot facility is located on Railroad Avenue in Lilburn’s historic Olde Town, a revitalized area home to new retail and restaurants including 1910 Public House. The newly-opened tasting room allows spirit lovers to take a tour of production, taste Top Hat Vodka and Jetty Absinthe products firsthand, purchase bottles to take home and enjoy storytelling from the team. Hope Springs plans to expand its product line in the coming months with the addition of gin and liquors and whiskey in the future.
